RECIPE: 'No Bake' Oat Fudge Cookies

One of my favourite recipes I have made so far, just by the fact that they taste so delicious and fudge like that its hard to believe they are full of natural healthy ingredients! Also no baking, means you don't even have to wait that long to enjoy them!

They are similar to that of a flapjack, but much more chewy and delicious! Drizzled with chocolate and full of delicious peanut butter! 


Ingredients:

1/2 Cup of Coconut Sugar

3 Tablespoons of Coconut Oil

2 Tablespoons of Coconut/Almond Milk

1 Tablespoon of Maple Syrup

1 Cup of Gluten-Free Oats

2 Tablespoons of Peanut Butter

Sprinkling of Pink Salt

85% Chocolate (For the choc-chunks!)


Method:


In a saucepan put in the coconut oil to melt, then add the coconut sugar, almond milk and maple syrup. Stir and leave the mixture to bubble so that it becomes more thick and sticky. Then leave to simmer for a couple of minutes. Take the syrup fudge mixture of the heat and stir through the peanut butter. Then add the oats, stirring so that they mixture absorbs into the oats. 

(I find it hard not to eat the mixture as it is, its so tasty when its hot!)

On a baking tray lined with parchment paper, dollop the mixture in small cookie shapes. You can them mould them more once they are cooler. Put a few chocolate chunks on top and sprinkle with a little salt.

Pop in the fridge for 1-2 hours, until they have hardened. They are now ready to eat!

(Store in the fridge)
