Peanut Butter & Jam Crumble Squares

I LOVE peanut butter, much I love it even more when its paired with jam! These little squares of heaven have a delicious balance of crunchy, nutty and sweet. Plus they are super easy to make.


Ingredients:


125g Peanut Butter

1 Egg

50g Coconut or Brown Sugar

1 Tsp Vanilla Extract

1/2 Tsp Baking Powder

50g Oats

Sprinkle of Salt


Topping

6-8 Tbsp of Strawberry or Raspberry Jam

30g Smooth Peanut Butter

10g Oats

1 Tbsp of Coconut or Brown Sugar

Sprinkle of Salt


INSTRUCTIONS

  1. Preheat your oven to 180°C and line/grease a square baking tin.

  2. In a mixing bowl add all the ingredients for the base then mix to combine.

  3. Once everything is mixing together, add into your tin and press down so that is even.

  4. Bake it in the oven for 10-12 minutes.

  5. In a small bowl add the peanut butter, oats, coconut sugar and salt. Mix into you have a 'crumb' like texture.

  6. Take the base out the oven and spread over the jam.

  7. Add your crumble topping to the jam and pop back into the oven for another 8-10 minutes.

  8. Bring your squares out of the oven and leave to cool for 10 minutes before cutting into 6-8 squares.

  9. Store in the fridge in an air tight container for 3-4 days.
