RECIPE: Creamy Avocado and Lemon Courgetti

Ingredients

2/3 Large Courgettes/Zucchini

1 Large Avocado or 2 Small Avocados 1 Lemon Handful of Coriander 2 Tablespoons of Olive Oil Salt and Pepper Coconut Oil (For frying) Toasted Seeds or Pomegranate Seeds

Preparation

1. In a blender, add the coriander, the juice of one lemon, the avocado and olive oil. Blitz until it becomes smooth, next add salt and pepper to taste. You can add more lemon/oil if you want your sauce to be thinner.

2. Spiralise your courgette/zucchini; you can do them like spaghetti or ribbons, up to you! Add a teaspoon of coconut oil into a pan and fry off the courgetti. Next add in the sauce and stir, combining all the sauce into the courgette, so that the flavours soak into it!

3. Serve and sprinkle of seeds, chopped coriander or pomegranate seeds! Top with your favourite meat, have as a side dish at your BBQ, or take to work as a delicious side to your lunch!
